INGREDIENTS:
- 4 full tablespoons of green Cardamom Pods
- 3 tablespoons whole Cloves
- 3 sticks or pieces of cinnamon
- ½ cup Fennel Seeds
- 1 tablespoon Black Pepeprcorns
- 1 Nutmeg
METHOD:
Dry roast all the above ingredients until the aromas are released – they will emit a heady fragrance. Once the spices have cooled grind until fine in a spice grinder. Use to flavour curries or as a meat rub.
