Experimental Wednesdays: Masala Meat Rub


  • 4 full tablespoons of green Cardamom Pods
  • 3 tablespoons whole Cloves
  • 3 sticks or pieces of cinnamon
  • ½ cup Fennel Seeds
  • 1 tablespoon Black Pepeprcorns
  • 1 Nutmeg


Dry roast all the above ingredients until the aromas are released – they will emit a heady fragrance. Once the spices have cooled grind until fine in a spice grinder. Use to flavour curries or as a meat rub.
