Experimental Wednesdays: Super Food Quinoa Salad

INGREDIENTS:

1/2 a cup whole uncooked quinoa, prepare according to directions on packet

100 grams feta, crumbled finely

1/2 a head of broccoli, cut into florets and steamed gently for 5 – 10 minutes, then cooled

2 spring onions, chopped finely

1 cheek off a red capsicum, cut into little chunks

1 generous tablespoon of sunflower seeds

2 handfuls of peppery rocket leaves

METHOD:

Mix together all the above ingredients until well blended. Serve in a big bowl and drizzle over the following dressing.

DRESSING:

1 tablespoon honey

1 tablespoon olive oil

1 tablespoon tomato ketchup

1 tablespoon lemon juice

Method:

Blend together all the above ingredients until emulsified.
