Don’t Give A *#$@ Sunday Night Salad

IMG_1615You know those times you’ve got to eat but you just can’t be bothered cooking? Well, I lucked in tonight because this salad was delicious and super easy and it used up some ingredients that were pretty much at their ‘Best By’ dates. I had no one to impress so this is the quintessential completely-on-your-own meal.

Ingredients (all the following ingredients, except the dressing, are very much approximate):

Bacon, cut into lazy strips and fried

Milk Cherries, (mini Bocconcini) shredded however

Iceberg Lettuce, pulled apart

Tomato, roughly cut into chunks

Spring onion, sliced

Mushrooms, quartered and fried

1 egg, fried

Cracked Pepper and Salt, to taste

Method:

To make the salad, scatter all the ingredients together on a plate. drizzle the following dressing evenly over everything.

Dressing:

1 teaspoon olive oil

1 teaspoon whole Dijon mustard

1 teaspoon White Balsamic vinegar

Pan juices

Method:

Mix together and drizzle over the salad.
