Food Teenagers Love to Eat – Massaman Curry

IMG_1364My guys know what is cooking as soon as they walk through the front door. Their voices rev up, starting small, “whaaa…,” building crescendo, “…aat’s…” now loud, “…THAT COOKING, MUM?”

Its pretty cool. I breeze past them with a nonchalant shrug. “Oh.” I say, breathily, “Just curry.”

It is strangely satisfying to know they are able to be so easily impressed by putting the following ingredients together:

3 or 4 onions, chopped

2 cloves garlic, crushed

2 – 3cms ginger, grated

1 teaspoon curry powder

1 tablespoon tomato paste

750 – 1kg cubed beef

4 tablespoons Mussaman curry paste

1 x beef stock cube, 1 x chicken stock cube, 1 x veggie stock cube

10 – 20 curry leaves

1 teaspoon Garam Masala

Fish sauce, to taste, if liked

1 tin coconut milk

Saute onion, garlic, ginger, curry powder, and tomato paste for 5 mins in a little oil. Add meat and cook for a further 5 – 10 minutes. Add Massaman curry paste and cover with coconut milk. Add curry leaves and stock cubes. Simmer for 90 minutes or until the beef is tender and until the coconut milk has separated. Add fish sauce and Garam Masala. Cook for a further minute or so. Serve with fragrant rice. I like Jasmine.
