One of my favourite brunches is Soft Poached Eggs with Guacamole and Sour Dough. Problem is I am a Coeliac. Or it was a problem until I discovered Matisse Sour Dough and Buckwheat Bread. It needs to be toasted but is an absolute treat. Sorry to all you gluten intolerant people who don’t live in Melbourne, because I am pretty sure their distribution is limited.
Recipe for Guacamole:
1 ripe avocado, mashed with the juice of one lemon, or to taste
1/2 a red chilli, chopped finely
1/2 a tomato, chopped finely
1 spring onion, sliced finely
Salt and pepper to taste
Method: Mix all ingredients together. Serve with softly poached eggs and gluten free toast, (or non-gluten free bread, for that matter).
